Our Story

Meet Greg

Greg was born in Nice, France, in 1977. It was a tradition back then for mothers to be served a glass of champagne right after giving birth! While I don’t propose we should bring this ritual back, perhaps a glass of natural wine would be welcome.

Unfortunately, thanks to circumstances beyond champagne, Greg's mother was unable to breastfeed, so he was raised on formula mixed with carrot juice. Not the best start for a healthy microbiome! As a child, Greg enjoyed liberal helpings of sugary breakfast cereal and processed food amongst what would have otherwise been a healthy Mediterranean diet. Coupled with the rampant use of antibiotics in the 80s, Greg’s growing list of gut health symptoms ramped up to a crisis point.

Following an Erasmus program, Greg moved to Scotland, but he could not escape his symptoms. Thankfully, here he met the love of his life - Lillias. By the time their paths crossed, he was dealing with a range of skin and digestive complaints.

Meet Lillias

Lillias grew up in a home filled with wholesome, sugar-free food, homemade sourdough bread, and a vegetarian diet. Together, with the help of a naturopath, they overhauled Greg's food choices. The book "GUTS" by Giulia Enders was an added catalyst for him to make the much-needed lifestyle change; they even began growing their own vegetables.

During one of their cycling adventures, they discovered that the world's oldest medicinal book hails from India and focuses on Ayurvedic medicine. What struck them most was how practitioners emphasize understanding a patient's diet and bowel movements before diving into symptoms.

At that time, Greg experienced alarming issues, including blood during bowel movements. After numerous doctor visits and invasive tests, no one could pinpoint the cause. Strikingly, not a single doctor inquired about his diet or lifestyle choices.

Time for Change

Greg’s lifestyle changes were far from instant! But gradually his diet evolved to include abundant greens, homemade sourdough, organic foods, and a daily glass of organic wine. At the same time, Lillias kept up the tradition of making kefir and kimchi and cooking fresh vegetables every day. Soon, his gut and skin issues were relegated to the past.

Another pivotal moment arrived when a friend from work was diagnosed with cancer. She gifted Greg the book "Anticancer: A New Way of Life" by David Servan-Schreiber, an academic physician battling brain cancer. It resonated with Greg because David had grown up in a French vineyard.

Incidentally, Greg's nephew is called Jules Chauvet— the namesake of the pioneer of natural wine. When an article in The Guardian appeared covering the winemaker, it piqued Greg's interest. Lillias introduced him to the book "Natural Wine" by Legeron, and they soon sipped their first bottle of natural wine - Gran Cerdo, created by winemaker Wii Gonzales. A winemaker whose conversion to natural wine was fueled by the suffering of his own father from pesticide exposure in the vineyard.

This journey led Greg to natural wine fairs, where he met winemakers disillusioned with conventional practices. He encountered one winemaker with a background in physics who bought a vineyard after realizing that the additives in wine were identical to those used in mobile phones!

Where We Are Now

Now, we're a family of four, and thanks to Lillias' enthusiasm, we've even started raising urban hens for fresh eggs.

We embrace natural wine, which represents only about 3% of the world's wine production. If you enjoy great-tasting wines, you should spread the word!
